Instructions

  2. Cream Butter and Sugars, in the bowl of a stand mixer, beat the softened butter with 1/4 cup sugar and 1/4 cup powdered sugar until light and fluffy, about 2-3 minutes.
  3. Add Vanilla, stir in 1 teaspoon vanilla extract until well combined with the butter and sugar mixture.
  4. Incorporate Dry Ingredients, add 2 cups flour and 1 cup finely chopped pecans to the mixture and stir until just combined, scraping down the sides of the bowl at least once to ensure even mixing.
  5. Form Dough Balls, scoop the dough into 1 tablespoon portions and roll each portion into a smooth ball with your hands.
  6. Place on Baking Sheet, arrange the dough balls on the prepared baking sheets, spacing them at least 2 inches apart to allow for spreading.
  7. Bake Cookies, bake one pan at a time for 15 minutes or until the edges turn a light golden brown, which ensures a tender center and slight crispness around the edges.
