Puff Pastry

Almond Filling
- 1/4 cup butter softened

Topping
- 1/4 cup sliced almonds

Instructions
- Preheat Oven: Preheat the oven to 400℉ and line a baking sheet with parchment paper to prepare for baking.
- Thaw Puff Pastry: Remove the sheet of puff pastry from the freezer and let it thaw slightly on the counter while preparing the almond filling.
- Mix Almond Filling: In a mixing bowl, combine softened butter, sugar, almond flour, egg yolk, and almond extract until smooth and well incorporated.
- Prepare Filling Bag: Spoon the almond filling into a resealable baggie, seal it, and set it aside for piping later.
- Cut Puff Pastry: Place the puff pastry on a clean surface and open it into a square. Cut the square evenly into 9 smaller squares and arrange them on the lined baking sheet.
- Score Borders: Using a small sharp knife, gently score a smaller square inside each puff pastry square about 1 centimeter from the edges to create a border that will puff up while baking.
- Fill Pastry Squares: Cut one corner off the filling baggie and carefully squeeze the almond filling into the inner area of each puff pastry square.
- Apply Egg Wash: Whisk together the egg white and water. Brush this mixture onto the outer borders of each puff pastry square to achieve a shiny, golden finish.
- Add Almond Topping: Sprinkle sliced almonds evenly over the filled almond mixture on each pastry square.
- Bake Pastries: Bake in the preheated oven for 15 minutes or until the puff pastry is golden brown and puffed up nicely.
- Dust with Powdered Sugar: Once baked and slightly cooled, dust the pastries with powdered sugar for a sweet finishing touch.
